Alaska Pollock Surimi

Alaska pollock surimi is a food product made from the meat of Alaska pollock (Gadus chalcogrammus), one of the most abundant and best-managed wild fish species in the world. Thanks to the quality of its white flesh, its texture, and its excellent natural properties, Alaska pollock is the preferred raw material for producing high-quality surimi.

What is surimi?

The word surimi literally means “minced fish meat” in Japanese. It is made from fish flesh that is cleaned, minced, and carefully washed to concentrate its high-quality proteins. It is then blended with ingredients that help preserve its properties during freezing, creating a versatile base that can later be transformed into a wide variety of products.

 

Production begins just a few hours after the fish is harvested, usually onboard the factory vessels operating in Alaska waters. This rapid processing helps preserve the freshness, quality, and functional properties of Alaska pollock meat.
