Alaska Wild Pollock a la Llauna
Ingredients
- 6 garlic cloves
- 100 mL olive oil
- 25 g Sherry vinegar optional
- Salt and black pepper to taste
- Paprika sweet, hot or smoked, to taste
- 4 portions of Alaska wild pollock
Instructions
- Finely chop the garlic and mix it with your chosen paprika.
- Lightly grease a llauna (or baking tray) with a little olive oil and add the Sherry vinegar, if using.
- Place the Alaska wild pollock portions on the tray, seasoning them beforehand with salt and pepper.
- Spread the garlic and paprika mixture evenly over the fish.
- Preheat the oven to 200°C (400°F).
- Heat the olive oil until very hot, but do not allow it to smoke.
- Pour the hot oil over the Alaska wild pollock portions.
- Bake for 5–7 minutes, depending on your preferred degree of doneness.
Finishing
- Place the pollock portion on a serving plate and serve immediately.
For a crispier topping, add a little breadcrumbs together with the garlic and paprika.You can also enhance the flavour by varying the spices, such as cumin, ginger, rosemary, or others.
