Instructions
Marinate the salmon with sugar, salt, aromatic herbs, pressing the fillet.
Leave to rest under pressure in the refrigerator for at least 24 hours.
Cut with a sharp knife into very fine and even slices.
Place in a suitable mould, timbale type.
Dress the rocket, place it in the mould, and cover.
