WILD ALASKAN SOCKEYE SALMON BURGERS with avocado, yogurt tartar sauce, and sweet potato fries

A dinner idea that lets you enjoy the intense flavor of wild Alaskan sockeye salmon. Look at that deep red color and firm texture!

Ingredients
  

  • Ingredients serves 4:
  • 400 g wild Alaskan salmon skinless and boneless
  • 1 egg
  • 30 g tapioca flour
  • 1 tsp Dijon mustard
  • 1 tsp fresh chopped parsley
  • 1 tsp salt
  • 1 large avocado
  • Arugula to taste
  • For the yogurt sauce:
  • 4 tbsp natural goat yogurt
  • 1 tsp lemon juice
  • 1 tsp chopped capers
  • 1 tsp chopped dill
  • 1 tsp chopped chives
  • 1/2 tsp salt
  • For the fries:
  • 2 sweet potatoes or regular potatoes
  • Extra virgin olive oil EVOO
  • Cumin
  • Oregano
  • Sweet paprika
  • Salt

Instructions
 

  • Preheat the oven to 180°C.
  • Peel the sweet potatoes and cut them into sticks. Toss with oil, salt, cumin, oregano, and paprika to taste, then bake for 35-40 minutes.
  • Blend the wild Alaskan salmon until it forms a paste and place it in a bowl.
  • Add the egg, parsley, mustard, salt, and tapioca flour, and mix until well combined.
  • Shape into burger patties and pan-sear until cooked through.
  • Mash the avocado with a drizzle of oil, a few drops of lemon juice, and 1/2 tsp salt.
  • Mix all the yogurt sauce ingredients in a bowl.
  • Serve a base of mashed avocado, place a salmon burger on top, and add yogurt sauce to taste. Garnish with arugula and capers.
  • Serve with sweet potato fries and enjoy!
