WILD ALASKAN SOCKEYE SALMON BURGERS with avocado, yogurt tartar sauce, and sweet potato fries
A dinner idea that lets you enjoy the intense flavor of wild Alaskan sockeye salmon. Look at that deep red color and firm texture!
Ingredients
- Ingredients serves 4:
- 400 g wild Alaskan salmon skinless and boneless
- 1 egg
- 30 g tapioca flour
- 1 tsp Dijon mustard
- 1 tsp fresh chopped parsley
- 1 tsp salt
- 1 large avocado
- Arugula to taste
- For the yogurt sauce:
- 4 tbsp natural goat yogurt
- 1 tsp lemon juice
- 1 tsp chopped capers
- 1 tsp chopped dill
- 1 tsp chopped chives
- 1/2 tsp salt
- For the fries:
- 2 sweet potatoes or regular potatoes
- Extra virgin olive oil EVOO
- Cumin
- Oregano
- Sweet paprika
- Salt
Instructions
- Preheat the oven to 180°C.
- Peel the sweet potatoes and cut them into sticks. Toss with oil, salt, cumin, oregano, and paprika to taste, then bake for 35-40 minutes.
- Blend the wild Alaskan salmon until it forms a paste and place it in a bowl.
- Add the egg, parsley, mustard, salt, and tapioca flour, and mix until well combined.
- Shape into burger patties and pan-sear until cooked through.
- Mash the avocado with a drizzle of oil, a few drops of lemon juice, and 1/2 tsp salt.
- Mix all the yogurt sauce ingredients in a bowl.
- Serve a base of mashed avocado, place a salmon burger on top, and add yogurt sauce to taste. Garnish with arugula and capers.
- Serve with sweet potato fries and enjoy!
