Dice the onion and yellow pepper and place in a large jar.
Add the mandarin juice, olive oil, and vinegar. Stir well and set aside.
Prepare a large plate with your preferred salad greens. You can use a single type or mix several: lettuce, endive, arugula, kale, watercress, baby spinach, etc.
Open the jar of Wild Alaska salmon and drain the oil if needed.
Top the greens with the salmon, add the capers, and drizzle with the vinaigrette just before serving.
