WILD ALASKAN SOCKEYE SALMON BURGERS with avocado, yogurt tartar sauce, and sweet potato fries
A dinner idea that lets you enjoy the intense flavor of wild Alaskan sockeye salmon. Look at that deep red color and firm texture!

wild Alaskan salmon
skinless and boneless

tapioca flour

large avocado
Arugula to taste
For the yogurt sauce:
4
tbsp
natural goat yogurt

tsp
lemon juice
1
tsp
chopped capers
1
tsp
chopped dill

tsp
chopped chives

For the fries:
2
sweet potatoes
or regular potatoes
Extra virgin olive oil
EVOO
Cumin
Oregano
Sweet paprika
Salt
Instructions
Preheat the oven to 180°C.
Peel the sweet potatoes and cut them into sticks. Toss with oil, salt, cumin, oregano, and paprika to taste, then bake for 35-40 minutes.
Blend the wild Alaskan salmon until it forms a paste and place it in a bowl.
Add the egg, parsley, mustard, salt, and tapioca flour, and mix until well combined.
Shape into burger patties and pan-sear until cooked through.
Mash the avocado with a drizzle of oil, a few drops of lemon juice, and 1/2 tsp salt.
Mix all the yogurt sauce ingredients in a bowl.
Serve a base of mashed avocado, place a salmon burger on top, and add yogurt sauce to taste. Garnish with arugula and capers.
Serve with sweet potato fries and enjoy!
