  • 250 g salmon
  • l soy sauce
  • l sake
  • 100 g beetroot
  • 100 g chives
  • l oil
  • l dashi stock
  • 10 g salt
  • 10 g pepper


  • Skin and bone the salmon, cut into fillets and marinate from one day to the next in the teriyaki sauce.
  • Sear the salmon in a very hot frying pan in sesame seed oil, leaving it uncooked in the middle. Cut each fillet into five slices.
