Wild Alaska salmon, Dublin bay prawns and pancetta with champagne, raspberry and szechuan pepper sauce

Ingredients
  

  • Wild Alaska salmon
  • 56 Dublin Bay prawns
  • 1200 g pancetta
  • champagne
  • 4 tray raspberries
  • Szechuan pepper

Instructions
 

  • Form the salmon, Dublin Bay prawns and pancetta into rolls and heat gently until just cooked.
  • Mix the champagne, raspberries and Szechuan pepper and reduce.
