Wild Salmon confit with fennel puree and Mini Spring Vegetables

Ingredients
  

  • 120 gr Salmon
  • 40 gr Fennel
  • 100 gr Spring Vegetables
  • 25 gr Salmon Skin
  • 5 gr Edible Flowers
  • 10 gr Salted Butter
  • 10 gr Lemon Peel
  • 4 gr Pink pepper grains

Instructions
 

  • Place the salmon on a tray, cover it in olive oil and the aromatic herbs and bake the 80ºC for 1 hour
  • Cut the Fennel, bake and liquefy it in a blender
  • Blanch the vegetables and glaze them in skillet with butter
  • Assemble the dish and decorate with wild fennel and edible flowers
