Wild salmon tataki with Ponzu sauce

  • fillet of wild salmon
  • Ponzu sauce
  • salt and pepper

Instructions
 

  • Season the wild salmon fillet.
  • Sear quickly on the griddle.
  • Cut into sashimi and serve with the Ponzu sauce.
