WILD ALASKA SALMON SALAD WITH YELLOW PEPPER & MANDARIN VINAIGRETTE

Ingredients
  

  • Lettuce arugula, endive, or your favorite greens
  • 1 tablespoon capers
  • 1 jar of Wild Alaska salmon in olive oil or natural
  • 1 yellow bell pepper
  • Juice of 1 large mandarin or 2 small ones
  • 1/2 small fresh onion
  • 2 tablespoons apple cider vinegar
  • 100 ml extra virgin olive oil

Instructions
 

  • Dice the onion and yellow pepper and place in a large jar.
  • Add the mandarin juice, olive oil, and vinegar. Stir well and set aside.
  • Prepare a large plate with your preferred salad greens. You can use a single type or mix several: lettuce, endive, arugula, kale, watercress, baby spinach, etc.
  • Open the jar of Wild Alaska salmon and drain the oil if needed.
  • Top the greens with the salmon, add the capers, and drizzle with the vinaigrette just before serving.
