WILD ALASKA SALMON SALAD WITH YELLOW PEPPER & MANDARIN VINAIGRETTE
Ingredients
- Lettuce arugula, endive, or your favorite greens
- 1 tablespoon capers
- 1 jar of Wild Alaska salmon in olive oil or natural
- 1 yellow bell pepper
- Juice of 1 large mandarin or 2 small ones
- 1/2 small fresh onion
- 2 tablespoons apple cider vinegar
- 100 ml extra virgin olive oil
Instructions
- Dice the onion and yellow pepper and place in a large jar.
- Add the mandarin juice, olive oil, and vinegar. Stir well and set aside.
- Prepare a large plate with your preferred salad greens. You can use a single type or mix several: lettuce, endive, arugula, kale, watercress, baby spinach, etc.
- Open the jar of Wild Alaska salmon and drain the oil if needed.
- Top the greens with the salmon, add the capers, and drizzle with the vinaigrette just before serving.
