  • 220 g salmon
  • 30 g mascarpone cheese
  • l lime juice
  • 1 g chives
  • 1 piece of crisp phyllo pastry
  • beetroot puree to taste
  • herb-flavoured oil to taste
  • rocket to taste
  • balsamic vinegar to taste
  • salt flakes to taste
  • black peppercorns to taste
  • 10 g salt
  • 10 g sugar
  • 10 g fresh aromatic herbs


  • Marinate the salmon with sugar, salt, aromatic herbs, pressing the fillet.
  • Leave to rest under pressure in the refrigerator for at least 24 hours.
  • Cut with a sharp knife into very fine and even slices.
  • Place in a suitable mould, timbale type.
  • Dress the rocket, place it in the mould, and cover.
